Don’t Disregard the Dizzy Chicken – Day 6







Chicken Corn Chowder (Printable Recipe)

·         1 large onion chopped
·         2 tablespoons fresh thyme, chopped
·         1 tablespoon fresh rosemary, chopped
·         2 cups chicken stock $2.00
·         2 large potatoes, skinned and cubed
·         3 cups of frozen corn $1.00
·         1 rotisserie chicken, chopped $5.00
·         1 cup salsa (if you like a southwestern take on it)
·         2 cups half-n-half $1.00
·         1 block Neufchatel cheese (or cream cheese), cubed $1.00

Sauté the onion, herbs and garlic until the onion is translucent. Add the chicken, chicken stock, and corn. Simmer gently for 20 minutes.  Add the half-n-half and cheese and then bring back to a gentle simmer and stir until the cheese is incorporated. Top with fresh ground black pepper and serve with crusty bread or tortilla chips.
